i can see why only bakeries would sell it, this stuff is pretty elaborate. they do sell premade banica sheets but those are so far from the real thing it's almost like a different pastry
one time i looked up the etymology of banica and apparently it's derived from an old slavic word гъбaницa, and гъбaнe/гъбaти means "to fold". before that i thought it meant "food that the bans eat". bans as in the slavic nobles
