you're misunderstanding a little bit. the pile that you put in a lot like cinnamon sugar. it doesn't end up as a jelly, just a molten powder. the jelly doughnut thing was just to get the idea of how the end product is filled in the center.
i swear it's not that crazy. it was really straight forward once i figured out how to make the dough and how much powder they wanted me to put in each ball
