There is a vegan variant of a Turkish food called "Cig Köfte".
They're basically cooked tiny bulgur + tomato paste + chilli paste + a lot of vegetables, sauce and spices mushed into a paste and formed into the finger foods seen in pic-rel.
Sometimes they're put inside dürüm wraps.
They're insanely hard to make, but we have a deli that makes god-tier cig köfte and I have sort of become addicted to it.
