The fundamental idea around monty hall is that probabilities aren't real things embedded into the situation under analysis,they're numerical representations of your state of knowledge w.r.t system under analysis.
So monty hall. You've got three doors, 1 has good shit, the other two have bad shit. You choose a door, then the host opens a door that has bad shit. Your state of knowledge about the system changes, so your probability must. So why should you change your choice? When you picked the first door, you had a 1/3 chance of getting the correct one. Now at this stage it's trivial that the chance of the one of the other two doors having good shit behind them is 2/3, this will not change. The host will open one of those doors and it will have bad shit behind it, therefore the unopened, unchosen door will have a 2/3 probability of being the correct one. So really it's not so much that the underlying probabilities change, it's about the way you divide up the events.
