I started prep cooking mid day prior and start actually cooking around early early morning, around 1-2 AM, and didn't finish until I was about to serve the Thanksgiving dinner around 5-6 PM. Most of the time, I cook something that takes less than half an hour and I make sure it's multiple servings so I can go a day or two without cooking again.
