But you MUST cure the wood for at least 18 months (before aging the bourbon) to remove the bitter tanins. Also Lincoln County process (Jack Daniels) tastes like shit and can suck my ass.
Scotch is OK, but it will never have the sweet and aromatic flavors of a well aged bourbon. AT BEST it can be smooth as silk, but never the nectar of the gods.
