The thing foreigners don't quite get about Italian cuisine, like Israel-anon saying it's all pasta and tomatoes, is that Italian cuisine differs vastly from region to region.
Apulia and Calabria have a lot of similarity to Greece, Sicilian has mix of Spanish, Greek and Arabic (and honestly by itself one of the most diverse jn Italy, ranging from fried food, fish, cous cous, desserts), Campania has pizza, parmigiana, loads of unique pasta dishes, fried seafood, mozzarella, Latium has recipes originating in the Roman empire, Carbonara, Amatriciana, Trippa, Maialino, central Italy as a whole focuses on meat dishes, Emilia has lasagna, piadina, ravioli, Lombardy has risotto, cotoletta, pizzoccheri, polenta, Piedmont has lots of unique pastries and is quite similar to France, the north east has strudel and other Bavarian dishes, there's tiramisu, Tuscany has Bistecca alla Fiorentina, and each region also has its unique wines, liquors, cheeses.
