It would have unironically been more entertaining having Scott give them a three day boxing boot camp and end it with a match, although that would have definitely been in Josie's favor.
And you're 100% right on the show working despite Sam and Jet; most all of the really big, memorable moments happened organically or necessity/circumstance.
