I read fantasy manga for the worldbuilding too! Have you read Akatsuki no Yona, Dungeon Meshi or Sousou no Frieren, Dorohedoro maybe? You have surely read Berserk, too
I watch and read lots of genres, but almost never shounen, with the exception of Gintama. I also don't like music anime.
My favourite for the past season was Mushoku Tensei btw
