Doing "off-grid" means you have to source proper land first before you can even consider the solution to electrical or sewage issues. If you were going to build a water wheel you need to understand how water flows and permeates through soil, how to operate heavy equipment to dig a small pond to build a small reservoir up because doing it by hand is literally insane and then rocks/concrete retaining walls so you can channel the water into the water wheel, then comes the fun of balancing the wheel and the electrical fun.
Each problem requires a trade in itself, not expert level knowledge, but you have to have a decent understanding of what you're doing because a single fuckup will compound into downstream problems, not to mention safety, eventually you'll be stuck trying to correct shit when its torrentially raining in Jan and its below freezing so everything is iced over. The videos on "off grid" living don't include the daily/weekly/monthly maintenance and frustrations.
