I forgot to mention onions too.
Put the ham hock in a large pot with some water, cook it until the meat is ready to fall off the bone.
While that is happening put the veg, other than about half the potatoes, through a food processor on the grate setting.
Take the hock out, skim the water and add the grated veg and potatoes to it.
Pick the meat off the bone and add back in when the veg is nearly done (use the ungrated potatoes to judge).
Season to taste.
If you want it thicker, mix up some cornflour separately and add in until you get the consistency you want.
