1. chop onion plus other hard veg (for example: garlic, peppers, chili)
2. heat oil or butter in pan
3. put chopped veg in pan
4. add some spices, whatever you like. i'm partial to garlic, chili powder, goya adobo, turmeric, spice blends like curry powder, but you can choose. seasoning salt or pre-mixed spice blends make this easy.
5. once the veg starts to change and look different (onions start to look clear) and smell good, add the meat. cook it a while. you can add other stuff at this stage after it cooks for a bit and the outside looks cooked, like tomato sauce, tomato paste, vinegar, some kind of booze, broth/stock. stir it around for a bit and let it cook for a while, like 15 minutes or half an hour, or longer on low heat (you can take it from stovetop and put it in the oven for example)
you can serve the veggies, meat and sauce over rice, noodles, whatever.
this method works for any combination of veggies, meats, spices, liquids, carbs. it is the Universal Cooking Method. onions + hard/aromatic veg, add spices, cook for a bit, add meat, cook for a bit, add liquid for sauce, cook longer, done, serve over rice or noodles.
