If you work hard, buy land cash, you still can't build a structure on it in most of the non 3rd world without jumping through some county inspector's tiny penis hoops. They want you to use their materials and construction methods, which (shocked face) are engineered to fail in a short period. Stone, natural timber, natural insulation, etc, are either banned or "not allowed because the inspector is unfamiliar with them" or "not graded lumber". Now you are buying materials you will need money to replace later in life.
Taxes. You could save up 60 years worth of tax money, but you worry that the tax rate will change and you will need more money to rent your land from the gov. Any structures, whether a mud hut or a cave, will draw attention and require a fee from the gov for some reason.
Mail. Even if you skirt all these problems, you need to mail in your local taxes, which means you need a mailing address and stationery bullshit. When you're 70 are you going to walk to town with 50 year old bills to buy stamps in your loin cloth?
Even if you could earn enough to go off grid, the constant need for the government to suckle at your teat of labor means you need a job. Which means you need transportation which usually isn't available in an area where you can effectively live off the land. Which means you need a car, gas, inspection, insurance, registration, and of course, money to repair and replace the car when it no longer works. Which means instead of working a few months a year to pay for property taxes, now you need a full time job because of all the other things that come along with it.
Only way I see this working is if you found a religion and donate your property to the church to avoid tax like the amish. Many states have protections that prevent local townships from enforcing building, plumbing and electrical code for recognized religions.
