the creators have literally come out and said multiple times that they just chose christian symbolism because mech anime were common at the time and they wanted something to set them apart and they thought that stuff looked cool and it was pretty foreign to japan so japanese audiences wouldn't be used to it and that there is no deeper meaning behind it
I don't understand how the creator can literally say "there is no deep hidden meaning to this" and fags will still have huge fucking discussions and make hour long videos about the deeper hidden meaning of it 25 years later

That's because it's not really Christian symbolism but rather just Christian symbolics. It barely affects the plot but it still fits in the show's aesthetic really well, so I don't see how its lack of deeper meaning is a problem at all.

I'm not particularly interested in the imagery of Eva beyond aesthetics and how it creates atmosphere but to fault others for trying to find meaning in it may as well just be anti-intellectualism. For example, Adam's counterpart being Lilith rather than Eve, the former having much more ambiguity associated with her. It's a conscious decision Anno made, there's nothing wrong with trying to understand why.
Plus the video in which he said he just picked the name cause it sounded cool was when he was talking to children.

Even if he were telling the truth it wouldn't matter. Creator's intent has little to do with the meaning of or artistic value of art. This has been understood for thousands of years: the muses speak through people. Whether that has a literal metaphysical meaning or not, there are certainly unintended but real messages which emerge from art all the time. Evangelion, particularly NGE and EOE, is no exception.
