Just know that it's not Italians that don't fit in your perception of race , it's your entire system that is inaccurate . You should look more into the different people of Europe , you'll realize that only a small percantage (Nothern European I'm guessing) looks your type of "white" , and besides skin color , which is clearly the predominant trait on which your system works , you'll see that there are many more slight features in which European differ from each other (Ex. Slavic people and Scandinavian people).
Also the "arab invasion" lasted less than a century and it was only in Sicily , which by the way , was also conquered by Normans. By your logic Sicilians should all be Scandinavians looking , and for example , Most of eastern Europe should be turkic instead of slavic since the ottomans ruled for centuries.
