Kung fu just meant hard work in Chinese. So learning Kung fu isn’t like some magical shit where you go sit in a cave for months and you understand a death touch. It’s training your mindset to keep fighting and keep improving yourself.
As far as schools go, there are preferences, such as southern shaolin roots were more hands related with emphasis on lower stance for protection while northern involves a lot more kicks to create distance
A lot of forms, and styles are basically “library” of techniques you can then go study some more. Want to get good at a side kick? Do reps. It’s the same principle, people just get blinded by crouching tiger and hidden dragon. Real Kung fu training is just the same as any other training. You get to learn a little bit about wrist locks and what’s parts of the body is vulnerable and how to take someone to the ground.
What people need to understand is that Kung fu, or Chinese martial arts is great for disabling or stopping your opponent. It’s never meant to be a bloodsport. What garner a lot of hate toward Chinese martial arts is that they don’t have any rules. Eye gouges, crotch shots, slap to the temple and targeting soft tissues like nose ridge and neck are all essentially techniques that try to induce pain and shock to give you options. The whole point is that you can stand your ground even if there are size differences with your mental training, knowledge of body weak points and mechanics, and control (so you don’t kill someone if you struck a pressure point on the neck or a soft spot like the temple, unless you intend to)
The techniques are practiced over and over for that one precision attack. (Hence an art form) Most fights end with a couple punches thrown and someone tripping over so the concept is to disable them as quickly as you could with any means necessary as self defense.
