How do you even use a fortress and what are they good for. Why not just defend a city instead of a random tile

i tried playing civ 5 once and it got into a point where every turn was taking half an hour of just moving every unit around so i quit

they're used for chokepoints and also because defending your city from afar with a 50% bonus to strength is better than letting the enemies plunder your land and lay siege to your city
