Watch out sodium phosphate and similar. This is used as a leavening agent but it is also used in laxatives. If used properly in baking, all of it is activated in your bread or whatever and you get bubbles. I suspect large bakeries use the same mixture of different agents in item with slightly different requirements, and you wind up with unactivated leavening agents in your food which then activate when digested.
You can also be just a *little* bit gluten sensitive. Try steering clear of that for a while and see what happens.
But most of all, if you aren't getting enough quality sleep everything is worse, but especially your digestive system. Stay clear of electronic devices for two hours before bed, but do put on music that helps you relax. Get up for a while if you can't sleep, rather than lie around anxious and pissed off.
