i'm a bit too sleepy to explain it properly but the point is that it's covering a bit more than your entire field of view and you can look around with your head rather than just your eyes, so it feels much more "immersive" and "realistic."
i was extremely skeptical of it as well until i got firsthand experience, but just those things go a really long way towards feeling like you're in a location looking at something in front of you instead of just watching a video. even without that just getting the sense of scale is pretty cool.
as far as this specific video being high quality that is mostly a fidelity thing. the downside of all the immersion is that even a tiny bit of jank is really perceptible and it's very hard to get perfect. a lot of videos for example are shot in a way that doesn't deal very well with your head moving (as apposed to tilting/rolling) so you have to either try and keep still or filter out the fact that the world is moving a bit whenever you do.
there are probably a dozen small things like like that you have to get right to be absolutely convincing so almost every video gets 1 or 2 wrong. not that this makes those videos worthless, just that tiny bit harder to enjoy.
the loona video is probably the first one i've ever seen where i didn't experience anything "immersion breaking" while watching. it's so good that i unironically think they busted out some sort of new recording tech and/or playback formatting. i'll have to go watch it again later to see if i can figure out what they did
