i never made kebab and im only talking out my ass, but if you wanna make minced meat kebabs just put these 5 spices in on a fire grill:
marinate it or just mix it with:
lemons
parsley or mint
salt and pepper
hot chili powder
ask op, he probably knows recipe better than i do.

That mix is red pepper, as what the emirati said there's many, many types of kebab, the one in the picture however, is made by minced meat, you put the size you prefer on a wide skewer, and make it stuck, dont make too thin, is the type of the skewer you need, you grill it on any type of fire you need, people usually prefer it grilled with coal fire, i recommend it as well, the way you want to eat it depends on you, you can make it as a sandwich, or with rice, or basically crush it with bread and swallow it, i like putting a lemon and squeeze it on it, some like it with grilled tomato, me included, here's a video, its in arabic but i think just observing is enough

Absolutely disgusting. Kebab is best served hot with some grilled tomatos, a simple salad, and a warm piece of bread.

Yeah, can't figure out a shit about language but by just looking at the meat it is lamb at it's best side cuts. From several animals. Definitely fatty and juicy.

well he said the fire went too strong and that strong fire ruins it, so doing it with calm coal fire is more preferable

Ok ok. :) I'm just pretty good with the meat and it all looked like lamb. Especially the side (ribs removed) cut. :)

That's actually an important bit.
I believe that was a fine grounded natural sea salt (with all it's quirks + crystallized water) and not a bunch of industrial refined dried sodium chloride.

We chefs like to cook with sea salt with all it's quirks. Sea salt has a taste of life. As funny it may sound like. :)
