To do this, go out for a hike to a lake that meets this criteria. Set up on the shore with a camera, your naked eye, or whatever. At eye level, pick out a tree or something on the other side of the body of water. Now slowly, steadily, lower your head down to the ground, taking care not to move it out of the same vertical line it occupied. You won't get it perfect, but that's okay. Now look at that same object you picked out at eye level. you'll notice you can see less of it! If it was a tree, most of the trunk will probably be obscured! Why is this? Because the curve of the earth is obscuring more of the object than it was when you were at eye level!
And remember, this is water you're looking out over. Water doesn't form hills.
