Welcome to a holiday edition of your favorite cooking show: CeltyCooks!
I hope you've all been good anons this year or you won't get my extra special present I'm preparing for you today!

The extra special holiday dish that we're making today is: Sweet Potato Casserole!
A super simple side sure to impress that femanon you've been stalking for a while!

This dish is my favorite for a few reasons:
One, it's simple! You really can't go wrong with some sweet potatoes, some pecans, and some mini marshmallows!
Two, it's something that you can whip up in a short amount of time
Finally, it's just dang good!

The ingredients that we're going to need are as follows:
2 large sweet potatoes (peeled and cubed)
2 tbsp unsalted butter
2 tbsp brown sugar
1/4c whole milk (room temp)
1/2 tsp salt
1/4 tsp ground cinnamon
1/4 tsp vanilla
1 1/2 c mini marshmallows
1/2 c chopped pecans

You want the chunks to be about two fingers wide.
Anything bigger than that and you'll have a few problems when we boil these babies.

Pay no attention to what my hands are doing and pay more attention to what YOUR hands are doing. AKA, don't use a knife like me.

Now you'll see I'm using table salt here, but I really recommend using kosher salt because it has a better pinch feel.

Think, like, creamy custard, no lumps but also not a liquid.
That's the consistency that you want.
Be careful not to overmix the potatoes.

After you've given them a good beating, you're going to be adding in some insult to injury: some spices.
Rub a bit of salt in the wound. Also other stuff.

We're going to add in some butter (2tbsp), brown sugar (2tbsp), 1/4c of room temp WHOLE milk, 1/2 tsp of salt, 1/4 tsp of cinnamon, and finally 1/4 tsp of vanilla extract.

Blend these together until fully combined. Make sure when you're mixing not to forget the milk like I almost did, Uhh but don't worry, I definitely put it in after this scene, I promise you.

After we've made our sweet casserole, it's time to put it in the casserole dish!
Spread the spicy mash in the dish until it's all evenly distributed.
Use the back of your spatula to kind of spread it around so you have a single layer for you to spread your marshmallows and pecans on.

Too bad no one cares about your fake logs or posts, try harder in 2021 ok?

Now it's time for my favorite part: the marshmallows~

You're going to sprinkle the marshmallows all over the top of the sweet potato mix until they cover it completely. This is my favorite part because I get to have an entire bag of marshmallows left over for me to eat on my own in the shadow realm.

And while I'm eating those marshmallows alone in the shadow realm, I will also look up marshmallow facts, like 50% of marshmallows bought in the summer are toasted over a fire.

For a final touch, we're going to sprinkle in some pecans too!
They add a nice nuttiness and sweetness to the dish that compliments the sweet potato flavor.
I also recommend using pecans in brittle too, because yum~
Candied yams with pecans is also a good way to use the rest of the bag if you're like me and using store bought, also it rhymes so it must be true.

Another thing that you can do to make this dish a little better is sprinkle in some chocolate chips to add a little sweetness to the dish.

Then we're going to bake this for 20 minutes, or until the marshmallows are properly toasted.
