having tried both i can't really tell any difference in taste between the two so i usually just opt for powder since it's easier and you can keep it on hand in bulk. certainly nothing wrong with using fresh instead if you think you'll be able to tell or want to sweat it or something. garlic on the other hand i do think is noticeably better fresh even if it's a pain.
if nothing else jumps out at you i've cooked just using those 3 as plenty of times, should be more than enough along side the veggies and sauce.
oh speaking of veggies i don't know if i've made this recommendation yet, but definitely try scallions over onions in my opinion. obviously i'm biased since i'm allergic to onion, but i truly think scallions the best aromatic option for asian food by a mile. the real secret to it is frying the white parts as your base, then sprinkling the remaining green bits as cold garnish at the end. truly divine shit.
