i'm happy with it in the sense that it's like nothing i've ever tasted before (i was worried i might go through all that trouble just for it to taste like condensed milk or dulce de leche) and i like it. but also it's not authentic cause i missed the memo that i wasn't supposed to salt the milk when making the fresh cheese (cause i needed to make cheese to separate the whey). so it's not just sweet, it's also salty. also i used village cow raw milk so it smells like a barn too.
definitely will try again in future, it wasn't so hard. bit wasteful, power-wise but eh, what can you do.
