Cats kill their prey almost exclusively by neck breaking or suffocation. The initial pounce should stun the prey and then they need to shake it violently to break the neck. Young cats do this, then fling the prey away and pounce on it again. They need to get their pounce refined perfectly while they are still young. The "play" is an important part of learning.
Dogs on the other hand kill by extreme trauma, blood loss and shock. This is why wild dog or wolf attacks look so different from cougar attacks (blood everywhere at kill site vs no blood at all). The dog attack is less technical and simply involves tearing chunks of flesh away and letting the prey die from shock or blood loss. It is a much less advanced form of hunting and they don't benefit as much by playing with their prey at a young age. If in a pack a canine will learn teamwork and other hunting skills.
