A more modern one is terror in resonance. Very action-packed and I definitely recommend this.
Kill la kill is aesthetic asf. Very funny and pretty interesting.
Besides that good movies is kimi no na wa and any miyazaki movie (spirited away is a good start).
Future diary is very action-packed and edge-of-seat entertainment and so is made in abyss.
If you want to branch out there's moe shit like k-on, yuru yuri, umaru which are just funny slice of lifes. They introduce you to the more subtle aspects of japanese humor.
For everything else myanimelist has top categories and manga > anime and subs > dubs generally. To see subs > dubs very explicitly watch steins gate in subs then in dubs. You don't even have to speak the language to get some of the jokes which don't translate (because rhyming or whatever) into English.
Also character archetypes extend past "basic bitch" and "goofy protagonist" in japanese and those don't translate at all until english develops for a 1000 years aesthetically.
That's a really good start, if you don't know what to watch some of the big names are fine like dragon ball is really good as long as you watch canon and naruto is fine but that's way more romantic or emotional as a driving force.
