But gas is actually much better for cooking than electric for several reasons. First burning gas to directly heat something has a higher energy efficiency than first turning gas into heat energy, heat enegry in electric energy, transport that electrical energy over miles and miles before turning that electrical energy again into thermal energy. Second you have better control over the amount and time that heat will be applied. Gas on: heat, gas off: no heat. With conventional metal plates heated by electricity those plates must first heat up and will keep a lot of heat when you turn them off. Gas is thus much more precise and can be better regulated. That's also the reason why literally any good cook will use gas instead of metal plates, don't know how this new induction field cookers are received yet. Downside of course is safety concerns that's true.
