They dont have refridgerators, and historically white people could just dig a cellar because underground is cold in europe. However in europe there was always a market for spices as an "exotic" thing because it was so absent from regular food, so its not like we didnt know what it was.
Modern food also uses cheap spices to hide smell of rotting meat. Thirdworlders have blown out taste buds and cant taste anything except the spice anymore, so they think spicy equates with good.
tl;dr white people evolved quisine that did not rely on spices but on actual tastes of meat, veggies, mushrooms etc.
