the whole process starts the day before with the frozen dough being set on fryer screens and thawing in a refrigerator overnight.
the slow that impedes the rise from the yeast and prevents the buildup of excessive moisture on the product.
using frozen dough allows us to make 14 dozen donuts in a morning, which i've had to in the past.

once doubled in size they need to spend at least 5 minutes in the open air, or at least until they no longer adhere to a glove, excessive moisture is your enemy and will ruin your donuts.

I don't eat them often either, but honey crullers were one of my favourite pick-me-ups in the evening when I go for a walk. I have a big sweet tooth and I try not to indulge it too much because my family is full of diabetics and I don't want to deal with that shit.
