You have to mince celery, carrots and onion and put them in a pot with a bit of oil and cook it for about ten minutes, adding a bit of white wine when the juices of the meat will be dried. When the wine will be also evaporated, you can add the tomato paste and some water. Boil for about 30 minutes (more is better) and your seasoning is ready. It's called Ragù.
