everybody at work always says hi to me and asks me how i am.
why do they do this? i don't even talk to anyone their, yet they're always trying to talk to me

Control issues. They aren't asking how you are as so much as asserting dominance over you and manipulating your world view into liking them because of their actions.

They truly care more for themselves and their self image when they ask you "how are you anon.?" than you will ever fathom (until I made this post).
