we know this because Roman inscriptions which line up with this logic
so technically what we now call Sunday used to be Wednesday in Roman times... and what we call Monday used to be Thursday... and so on... Jesus rose on Sunday, but "that" Sunday for us would be Wednesday... a nice Jupiter-Jesus conjunction, if you ask me
