All I used is water, yeast and sugar. It smells like cheap wine. Why aren't we all doing this instead of spending 10x the cost at the store?

I simmered water to 90f and added the yeast. Put it in a dark place for a couple of weeks. Didn't smell like wine until a week of fermenting.

only if you distill or keep the oxygen low. Open air fermenting isn't dangerous at all, although much higher chance of making shit tasting drink if not careful.
