If you're not deep-frying, but sauteing your food, even to the point of soaking it in oil, then use virgin free range pork lard (it's very healthy, rich in omega 3), the leftover fat of some cooked beef (buy green, free range beef), butter (same, but mix it with some oil so it won't burn), extra-virgin olive oil, extra-virgin coconut oil, or whatever oil people say for sure is healthy; and do it always in very low temperature. Even when frying normally, try to use the lowest temperature, just don't use expensive oils which are better if consumed raw (extra-virgin olive oil, for example).
Lard is probably what you seek. It's very stable at high temperatures. No idea about the avocado and peanut memes.
