>>15958597There are multiple recipes and idk which one is the true hungarian goulash so I do it my way
I first throw onion and garlic on a pan and immediatly add some salt so that it doesn't burn
Then I add carrots and meat (pork shoulder is the beat imo but you can add beef instead)
Afterwards I add a generous amount of pepper and basil
Then I add mushrooms pepper and tomatoes
After all components properly join together and the whole stew gains a proper texture I throw everything into a large pot and pour a little bit of water so that everything is covered
I then add allspice and bayleaves cover the pot and let it sit on small fire for 20-30 minutes
Then I do some tasting and add salt pepper and other spices how I want (sometimes I use oregano as well)
Preferably you should reduce quite a lot of water so that the stew becomes thick and components soften as much as possible
