As you point out the primary job of a tank is not to fight other tanks, but to engage and support infantry, a big cupola like that is not actually helping do that much, but is creating a significant vulnerability.

Tiger armor was fine against 75mm, Tiger II couldn't reliably withstand the 90mm, so for what you're trying to do the E100 is the actual solution, and for the reasons you don't like the E100 the Panther, T-34-85, later Shermans, are better again that your proposal.
Go big or don't. Build a light tank that's pretty well protected, or build a heavy tank that is actually well protected, because compromise is just failing at both.
