I'm that guy at my company and I'll tell you we don't log or monitor traffic at all... I can see who's connected and kick people off, turn on logging briefly for diagnostics but it fills up the disk fast if I forget to turn it off. All I'd see is IPs you're connecting to and maybe DNS requests but most traffic is encrypted with TLS so I can't see what you're posting or exactly what URL you access, just domain names. And I really don't care what you look at.
