DS1 is clunky and slow, and theres lots of running around, but the game is good if you can get over that. The aesthetic is also very gray.
DS2 is going to be the hardest IMO, and the most different from ER. The enemy placement and boss runs are brutal in DS2 unlike ER. In DS2 you have lots of build diversity, but the ADP (adaptability) stat is gay.
DS3 in terms of map design is going to be the most different from ER as its very linear and not open, and the bosses are the main selling point. I'd recommend playing them all.
As for Bloodborne, Demons Souls, and Nioh, I haven't played Bloodborne so I can't say much.
Demons Souls is difficult in that you have a lot of penalties for dying, and the bosses are gimmick fights, unlike ER.
Nioh is a lot like ER in how the bosses just do ass loads of damage and you don't get much chances to dodge. Haven't played much but that's all I can say.
