the disk wouldn't mount no matter how many times I plugged and unplugged, even though it saw the partition

Your disk is dying and you should move any file you don't want to lose to a new drive as soon as possible.

If you have an empty disk with enough space to copy all the files, the faster way to copy the entire drive is by running
robocopy OLD_DISK_DRIVE_LETTER:\ NEW_DISK_DRIVE_LETTER:\ /e /z
(i.e., something like robocopy D:\ E:\ /e /z, just change D:\ and E:\ accordingly)
