last couple of batches of kimchi i made turned out pretty bad, i don't know what i did wrong. i soaked the cabbage, added in right amount of salt, drained it, mixed in ginger and garlic and red pepper flake, and added more salt, and fermented it in a special airtight kimchi box. they went sour, and not like a good batch of kimchi. any kimchi bros out there with good tips? i like kimchi, just haven't been able to get it right.

Watch Maangchi's recipe and techniques. She has a video on it on YouTube. I usually don't let it ferment outside the fridge for more than two days, sometimes less if it's warm. Then I transfer it to the fridge and check it every 2-3 days to push the kimchi down because it'll bubble. It's usually ready in 1-2 weeks.
