I was taught one of the simplest methods, where I first boil beef and whole potatos to soften it up and create a light broth, then remove the meat and the potatoes and cut them into smaller pieces while adding individual components I'd have prepared by then (cabbage, carrot, beet, onion, garlic, mashed tomatoes). Pieces of beef and potatoes are then added back as well.
As the final ingredient, I'd squeeze some lemon juice into it to add the sourness. I suppose that's the part where one may add vinegar instead. I haven't tried, though probably should, for variety's sake. Don't have any on hand at home but I do have lemons so it works for me.
