I agree with you OP. I'm doing keto atm.
Consuming 90% fat and maximun of 20g carbohydrates a day. Never felt better.
(After the initial flu-like symptoms when switching fuel source from glucose to fat)

-White potatoes are high in vitamins/minerals but are bad for things like blood pressure due to lack of fiber/phytonutrients. Eat red/yellow/purple potatoes and yams/sweet potatoes instead, which have tons of nutrients and phytonutrients, and imo they taste better anyways
