the time is said to be at leats 6 hours. I've done 6, 8, 10 and 12. the 10 and 12 were too tender to my taste, I didnt like it, the 6 hours version was ok but depends on the cut. I strongly advise to use the shittiest cuts like brisket or legs with high % of tissues and collagene because it has the most flavor and is made for recipes like this.
