If evolution isn't a real process caused by environmental adaptations then you should have literally the exact same metabolism as sherpas yet they found that the mitochondria of sherpas are more efficient at converting oxygen into energy so they need less of it to survive, which is a natural adaptation caused by living in high altitudes for thousands of years, those that were born with the mutation get to live longer and have more time to create children as lack of oxygen stresses the heart. If that adaptation happens in mere thousands of years, why doubt the potential of hundreds of millions of years of the same process?
The fish doesn't change by stepping on land, some just happen to be born with the genetic mutation that gives them the ability to breathe air and water, if strong enough to "walk" they go on land out of curiosity or maybe lack of food available in the water forces them out. If natural selection culls a ton of water species due to food shortages those that survive by going on land are more likely to have offspring, the offspring are born with the same ability and further mutations. Genetic mutations can be good or bad, but the bad ones are less likely to get passed to the next generation if they decrease your chance survival.
