Cast iron for the crust is fantastic if you can get it hot enough. I like my steak on the rare side and have found that a torch works a bit better/more consistent without going too far past the sous vide cook temp. I prefer a smoking hot grill with oak lump to finish it off to get that touch of smoke flavor.

Texas bbq is fantastic but smoked gator sausage po-boys, crawfish étouffée, chicken sausage gumbo, and pork jambalaya has made many Texans cross state lines for that Cajun cuisine. My great grandfather was from Oklahoma but when he met a Cajun queen down here that could cook, he put a few babies in her and decided to stay. Don’t know if Texas bbq has that effect.

When I fire up the pit, it’s an event in and of itself. I can spend 8 hours smoking a shoulder roast, slamming back old fashions, and playing petanque in the yard. No rush, food just comes out better when’s it’s slow and attended to.

My father in law’s bbq on the other has earned the unflattering title of “burnt-b-que.” Motherfucker burns chicken leg quarters because he can’t be bothered to spread his coal evenly and doesn’t even check for flareups. Too busy watching cars go round in circles (nascar).
