That's how you get density layers and buoyancy, through motion, that's why water is displaced and level, it is the perpendicular to the true motion vector which is upwards. When something is in contact with the earth, only then density and buoyancy exists, but in "freefall" there is no density and buoyancy movement. An air-bubble in a bottle of water will rise in the water and a dense object will sink, but when you let the bottle go that motion stops. Gas, liquid, and solids don't move and the whole thing appears to "go down", however they are simply losing their momentum which they had when they were connected to the earth. They don't move, that means there is no acceleration present, and there is also no pressure anymore. Any accelerometer measures zero acceleration in "free fall".
And when you let fire go, the flame becomes a sphere, because there is no vector in free fall anymore, it is the earth and the heavens above that are in motion, not the objects.
1G is the motion of earth. How do we get more than 1G? Through more motion. In a fighter jet for example, there you will reach more than 1G because the motion of the fighter jet is pushing against your body.
