the "standard" of Pho in my opinion is the broth, you see there are condiments like chili sauce and hoisin sauce, even satay or other sauces for Pho. It's one thing if it's your preference to put the sauces in, but it's another thing if the Pho's broth is underwhelming and they try to make up with the sauces.
a good Pho should already have clear-looking and flavorful, tasty broth without anything else poured in. and beacuse beef is usually richer and bolder in flavor than chicken pho that's why its easier to get it done.
