Because if taken to a proper meeting, it would be reasonable to say that sitting down once your shift was over was within your rights, and that the manager no longer had any control over you. Certainly, offering you such a blunt and stupid ultimatum, if done in front of witnesses could be considered provocative behaviour. Your reaction could therefore be dismissed as 'heat-of-the-moment' behaviour - very specific reaction to a direct and inappropriate stimulus.
You should have had a meeting - your boss, supervisor's boss, H.R. You should have been assigned a companion to assist you in the process.
From what you've told us, it sounds like they've broken a bunch of U.K. employment laws and you'd have a decent chance at a tribunal.
Even if you were employed by a sandwich shop and you'd been there a week, you're still entitled to far more protection than you seem to have been afforded.
