It happens that when most of the living species reproduce, yes they pass they information to the new generation, but yeah they ussually, in general, need 2 beings to reproduce, so, when they do it, the newborn has the information of both parents, but, mixed, in what way? in any way, so some mix parts of one and less from the other, others recive more of the ancestor of the parents, others just mix them and form a new thing related, etc, etc.
So in that mix, deformation happens. Same as we humans, we have people with whatever variation in the world: people extremely tall, or tiny, pointy or round ears, color, muscle potential, etc. Since we humans are not killing each other for particular secundary characteristics (ehem.....), you dont see today fast specialization, but in animals, is the wild world, beings that live more pass the good shit to new generations, or die.
So your answer is: plant exist, some day, newborn plant had deformation, weird vague shit but hey, insect interact less, or more, with the plant, good, so plant pass that to the new generation, now newborns have vague shit, most of them die anyway as usal but again some plant develop the deformation more than before, it's just %, so they pass that, and repeat, trial and error, for like...a few million years
