However in every pagan sect there was a commonality of sacrifice for absolution or to please the gods, this human desire was the only thing technology couldn't replace. Christianity stepped in and said you no longer have to slaughter a cow or lamb or your first born child to the gods, because the sacrifice has already been made. This had allot of appeal because sacrificing your food is not an easy task for a peasant. Essentially people became more demanding of their gods spiritually but not materially

Circling back to the last point, different religions can offer different things, though I think you miss understand what and why paganism existed and why people would go to it today

The vast vast majority of pagans converted willingly to make trade easier, they didn't really have much attachment to paganism because they didn't have to change their customs much and because paganism was a material religion made out of necessity not thought.
That isn't to say that Christian history doesn't have blood on its hands, you can't imagine the relations between Christians and pagans were very good after all the autistic raiding
Not to mention most of the stuff you complain about was political manipulation from European elites
